Molasses has a large amount of non-fermentable sugars that create an enormous osmotic pressure at fermentation. This is the most difficult substance to ferment and often reaches only 7% alcohol. This yeast reaches much higher, typically 11%.
When using just molasses put 6.4kg of molasses into a 25 litre fermentation vessel and add 5 litres of boiling water. Stir until dissolved then top up to 25 litres with cold water before before adding the Rum Turbo Yeast. Stir until fully mixed .Start gravity should be around 1.140 and finish 1.055-1.160 to yield 11% abv.
Instructions when using a blend of molasses with sugar for extra strength: Put 5 litres of boiling water into your 25 litre fermentation together with 5kg of sugar, it can be refined or unrefined sugar, and stir until dissolved. Then add 2kg of molasses, stir until dissolved, then top up to 25 litres with cold water before adding the Rum Turbo Yeast. Stir until it is fully mixed. Start gravity should be around 1.100 and finish 1.000-1.005. Never make more than 25litres in one batch.
